shuktoIngredients
• Long grain rice: 1/4 cup (washed and drained)
• Milk: 4-5 cups
• Cardamom seeds: 2-3 (crushed)
• Almonds: 2 tbsp (blanched and chopped)
• A pinch of saffron threads soaked in a little hot milk
• Skinned pistachio nuts: 1 tbsp (chopped)
• Raisins: 1 tbsp
• Sugar: 2-3 tbsp

Method
• Put the rice, milk and cardamom in a pan, bring it to boil and simmer it gently till the rice is soft and the grains start breaking up.
• Add almonds, pistachio, saffron and raisins and simmer the it for 3 minutes.
• Add the sugar and stir until it has dissolved.
• Remove it from the heat and serve it either warm or chilled.
